By living in Seattle it is assumed that we live and breath coffee and the lingo that surrounds this craft beverage.  It all started over 40 years ago when Starbucks awakened the coffee revolution by opening its first small shop in the Pike Place Market. Over the course of 4 decades we have managed to maintain the highest concentration of coffee shops than any other city.  But what do we really know about these pits that reside in their cherry-like fruits?

Due to the iconic appeal of Seattle, coffee and its location, Eat Seattle starts its food tour in front of Seattle Coffee Works, located on First and Pike. About a month ago (10 months after founding the company) a tour participant said to me “you should let them know that you start your tour in front of their shop”. It occurred to me that I hadn’t spoken to any SCW staff since I informed them that my Yelp listing uses their address… I reached out immediately to reintroduce myself and check-in. Jesse Fish, General Manager and Barista extraordinaire, carved out some time to meet in person, take me around their facilities and taste coffee!!

Happy New Year!

Eat Seattle

Wow, what a year! This blog has morphed into a space where I can share a more personal perspective in all that I’m learning as I go on this experience called life. I apologize for not posting more often but running a small business is a time consuming job.

In a brief recap, many of you know that, 2014 was spent vacationing in Europe which allowed the rare opportunity to step back and refocus on life priorities. Equally as important, it gave me a chance to explore ways in which I can get back to my food roots (and utilize my expensive Le Cordon Bleu education). The Awakening Palate started as a platform to share all that I was absorbing about agriculture, local cuisines and the environment in Europe. At the same time, I began researching more about our food and our sources here in the Northwest. In January 2015 when we returned, I was anxious to hear from Northwest farmers, fishermen, and butchers but I didn’t find a food tour or cooking class that relayed the information I was seeking. Thus in a matter of a month I set out to create Eat Seattle which is focused on educating about all these special aspects of the Northwest.

I’m lucky that one of my best friends is a fantastic home cook and adores hosting parties with close friends; sharing her prized wines, designing a stunning spread and sending us home with a generous portion of to-go goodies. Over the last decade that I’ve known Andrea, there is one recipe, in particular, that she has repeated and perfected. That is her ribs! Andrea takes care in every step of the process and has agreed to share her technique with us.

Similar to the crab cake philosophy..the key to ALL amazing food is to use the freshest local ingredients. Eat Seattle partners with BB Ranch a full service butcher dedicated to natural grass-fed meat. They work with local farmers to ensure animals are raised in comfortable living conditions and treated with care at the end of their life. I highly recommend checking them out in the Pike Place Market’s ‘Market Corner’ building. They are doing exceptional things.

Microbrews in the NW Gaining Traction Locally and Worldwide

There has been much discussion about what makes up Pacific Northwest cuisine. With so many influences, it’s difficult to pinpoint a single ingredient or style of cooking that truly represents what we do here. An affinity for fresh seafood and local produce belong in the definition, but we are steadily gaining a reputation for another product: beer. As of 2014, there were over 280 breweries in Washington, and that number grows daily. Craft breweries are popping up all over the U.S., but there are many reasons as to why it is such a Northwest staple.
